The Treaty of Prezvin saw hundreds of thousands of muslim Albanians converted to Turks.
Turks also got plenty of Janissaries from the Serbian, Macedonian, Bulgarian and Romanian populations. One could be taken as a janissary by force, or sometimes it could be voluntary with the blessing of the young man's family who desired a better life for their son.
The Ottomans had no interest in ethnicity as religious identity was paramount, an attitude which carried over to the Christian population, especially in rural areas. Janissaries became known as the most fanatical Muslims in the Ottoman Empire, so fanatical and independent-minded in fact that they became a danger to the Sultan and had to be destroyed as an active force in 1826.
